(01) FERMENTATION THAT CARRIES TRADITION
The Samyangju method(3-Stage fermentation), which builds depth through multiple stages rather than remaining in a single
fermentation, is the starting point of NAEOE’s distinctive flavor.
This fermentation is a traditional brewing method that gradually builds depth and density of flavor through layered
stages of time.
ATMOSPHERIC DISTILLATION
Through atmospheric distillation, we capture the aromatic structure, texture, and lingering finish of the rice
fermentation base with greater clarity.
While vacuum distillation tends to create a cleaner and lighter impression, atmospheric distillation offers a stronger
ability to preserve the aroma and texture of the original ingredients.
COPPER POT DISTILLATION
The whisky-style single copper pot still refines the flavor with precision while preserving the distinctive character of
the spirit.
The copper still delicately polishes the flavor while allowing the original individuality of the spirit to remain clear
and expressive.
KOREAN SPIRITS
Rice and harvests shaped by the nature of Jirisan are our starting point.
They leave behind the depth of grain and a soft, lingering finish upon a clear and composed impression.
Based on agricultural ingredients from Sancheong and its surrounding regions, NAEOE refines the sensibility of Korean
origin into distilled spirits.
NATURAL MATURATION
NAEOE’s proprietary unglazed earthenware gently refines flavor and aroma through micro-oxidation.
Micro-oxidation is a slow breathing process with nature, softening and polishing the spirit’s flavor and aroma with
subtlety and depth.
PURE WATER
The clear water of Sancheong, widely known as a source of pure water, is an essential foundation for NAEOE’s clean
impression and balanced taste.
Sancheong is a region recognized for its clear water and pristine natural environment, and is known as one of Korea’s
notable sources of pure water.
